Method

  1. Step 1. Bring the water to a simmer with the blended onion, pepper and crayfish.
  2. Step 2. Add the catfish and simmer gently for 12–15 minutes, until the flesh is opaque and flakes apart with no translucent centre.
  3. Step 3. Add small balls of the pounded yam and stir until they dissolve and the soup thickens, about 8 minutes.
  4. Step 4. Stir in the washed uziza and utazi and simmer for 3 minutes.
  5. Step 5. Season lightly and serve with a small portion of pounded yam, eba or boiled yam, and a side of washed vegetables.
