Method

  1. Step 1. Boil the beef with the onion for 30–35 minutes until tender and cooked right through, keeping the stock.
  2. Step 2. Warm the palm oil gently in a pot, stir in the ground ogbono and cook for 2 minutes without letting the oil smoke.
  3. Step 3. Add the hot beef stock a little at a time, stirring until smooth and slightly drawn.
  4. Step 4. Return the beef with the crayfish and pepper, and simmer for 10 minutes.
  5. Step 5. Stir in the greens for the final 3 minutes. Serve with a small portion of swallow or boiled yam.
