Method
- Step 1. Put the okpa flour in a bowl, add the palm oil and rub it through the flour with your fingers until evenly coloured.
- Step 2. Add the warm water a little at a time, whisking to a smooth, pourable batter with no lumps. Stir in the blended pepper, onion and a little salt.
- Step 3. Pour into heatproof bowls, banana leaves or clean uma leaves, and cover well.
- Step 4. Steam over boiling water for 40–50 minutes, until firm, set right through and a knife comes out clean.
- Step 5. Wash and slice the tomato and cucumber while the okpa steams.
- Step 6. Serve the okpa warm with the salad and a piece of fruit.
