Method

  1. Step 1. Mix the pap paste with a little cool water until smooth and lump-free.
  2. Step 2. Pour on the boiling water in a steady stream, stirring hard, until the pap thickens and turns glossy. If it is not thick enough, cook it in a pan for 2–3 minutes.
  3. Step 3. Stir in the pasteurised milk.
  4. Step 4. Top with banana, a small scattering of groundnuts and the fresh fruit.
  5. Step 5. Pap on its own is mainly starch, so serve it with a fully boiled egg, moi moi, akara or beans to add protein and iron to the meal.
