Method

  1. Step 1. Mix the pap paste with a little cold water to a smooth slurry.
  2. Step 2. Pour on the boiling water in a steady stream, stirring firmly, until it thickens. Return to a low heat for 2 minutes if it needs it.
  3. Step 3. Heat the oil, cook the onion and tomato for 4 minutes, then add the washed ugu and cook for 2–3 minutes.
  4. Step 4. Fry or boil the eggs until the yolk and white are firm.
  5. Step 5. Serve the pap with the egg and sautéed ugu alongside.
