Method
- Step 1. Boil the beans in plenty of water for 40 minutes until beginning to soften, topping up with hot water as needed.
- Step 2. Add the sweetcorn and cook for a further 15 minutes until both are soft.
- Step 3. In a separate pan heat the palm oil, cook the onion for 3 minutes, then add the tomato and pepper and simmer for 8 minutes.
- Step 4. Stir the sauce into the beans and corn and simmer together for 5 minutes.
- Step 5. Add the washed ugu and cook for 3 minutes only, then season lightly.
- Step 6. Serve with the freshly sliced avocado on top.
