Method

  1. Step 1. Simmer the palm fruit concentrate with the water for 15 minutes, stirring occasionally.
  2. Step 2. Add the onion, pepper, banga spices and crayfish if using, and cook for 8 minutes.
  3. Step 3. Add the tilapia and simmer gently for 12–15 minutes, until the flesh is opaque, firm and flakes apart with no translucent centre.
  4. Step 4. Stir in the washed bitter leaf and simmer for 5 minutes.
  5. Step 5. Season lightly and serve with a small portion of starch, eba or boiled yam and washed vegetables.
