Method

  1. Step 1. Boil the peeled plantain in water for 12–15 minutes until tender, then drain.
  2. Step 2. Heat the oil, cook the onion for 2 minutes, then add the blended tomato and diced carrot and simmer for 8 minutes.
  3. Step 3. Stir the groundnut paste with the water until smooth, add to the pan and simmer gently for 5 minutes, stirring so it does not catch.
  4. Step 4. Add the washed greens and cook for 2 minutes until wilted and the sauce is piping hot throughout.
  5. Step 5. Season lightly and serve the sauce over the plantain, in a small bowl if appetite is low.
