Method

  1. Step 1. Boil the sweet potato in salted water for 15–18 minutes until tender.
  2. Step 2. Boil the garden eggs for 8 minutes, drain and mash roughly.
  3. Step 3. Heat the palm oil, cook the onion for 3 minutes, add the blended tomato and pepper and cook for 10 minutes until thick.
  4. Step 4. Stir in the mashed garden egg and simmer for 5 minutes, seasoning lightly.
  5. Step 5. If using eggs, boil for 9–10 minutes so both yolk and white are firm, then halve.
  6. Step 6. Serve the sauce with the sweet potato and the boiled egg.
