Pregnancy-friendly okpa with tomato and cucumber salad

Okpa is a steamed pudding made mainly from Bambara nut flour, particularly associated with south-eastern Nigeria. Steamed until firm right through and served with a well-washed salad, it provides plant protein, fibre and iron.

Method

  1. Step 1. Rub the palm oil into the okpa flour until the colour is even.
  2. Step 2. Whisk in the warm water gradually to a smooth, pourable batter, then stir in the blended onion, pepper and a little salt.
  3. Step 3. Pour into heatproof bowls or wrapped leaves and cover well.
  4. Step 4. Steam over boiling water for 45–50 minutes, until firm and set right through — a knife pushed into the centre should come out clean, with no wet batter.
  5. Step 5. Wash the tomato and cucumber thoroughly in clean water and slice.
  6. Step 6. Serve the okpa warm with the salad and a piece of washed fruit.
