Method

  1. Step 1. Heat the oil and cook the onion for 3 minutes.
  2. Step 2. Add the tomatoes and pepper and cook for 6–7 minutes until softened into a sauce.
  3. Step 3. Stir in the beans and heat through for 3 minutes.
  4. Step 4. Add the washed spinach and cook for 2 minutes only.
  5. Step 5. Reheat the chilled rice once until piping hot throughout, spoon the beans over and serve.
