Method

  1. Step 1. Dry-roast the groundnuts in a wide pan over medium heat for 5–6 minutes, shaking often, until golden. Tip onto a plate.
  2. Step 2. Roast the pumpkin and melon seeds for 2 minutes only, as they burn quickly.
  3. Step 3. Let everything cool completely — this keeps the mix crisp.
  4. Step 4. Stir in the chopped dried fruit and the pinch of salt if using.
  5. Step 5. Store in a clean, dry, airtight tin and take a small handful as a snack.
