Method

  1. Step 1. Rub the fish with the blended onion, a little salt and the oil.
  2. Step 2. Roast or grill the fish for 18–25 minutes, turning once, until the flesh is opaque and flakes easily right through.
  3. Step 3. Roast the plantain alongside until soft and lightly charred.
  4. Step 4. Make a quick fresh sauce with the washed chopped tomatoes, or serve them raw and well washed.
  5. Step 5. Serve with the sliced avocado.
