Method

  1. Step 1. Toss the chicken with the yaji and oil and leave for 15 minutes in the fridge if you can.
  2. Step 2. Cook the brown rice in boiling water for 25 minutes until tender, then drain.
  3. Step 3. Grill or dry-fry the chicken for 12–15 minutes, turning, until the juices run clear and there is no pink meat.
  4. Step 4. Wash and prepare the cabbage, tomato and onion and dress with lime juice.
  5. Step 5. Serve the chicken over the rice with the salad alongside.
