Method

  1. Step 1. Boil the sweet potato in lightly salted water for 12–15 minutes until tender.
  2. Step 2. Boil the eggs for 8–9 minutes so the yolks and whites are fully set, then cool and peel.
  3. Step 3. Fry the onion in the oil, add the tomatoes and cook for 5 minutes until thick.
  4. Step 4. Stir in the shredded greens and cook for 1 minute.
  5. Step 5. Spoon the sauce over the sweet potato and top with the halved eggs.
