Method

  1. Step 1. Boil the soaked beans in fresh water for 45–55 minutes until completely soft, then drain most of the liquid.
  2. Step 2. Heat the oil, fry the onion and tomato for 8 minutes to make a light sauce.
  3. Step 3. Add the sweet potato cubes and a little water and cook for 15 minutes until tender.
  4. Step 4. Fold in the beans, then stir the washed spinach through for 2–3 minutes.
  5. Step 5. Season lightly and serve with the fresh fruit — the vitamin C helps the body absorb iron from plant foods.
