Method

  1. Step 1. Heat the oil, soften the onion, then add the blended tomato and pepper and cook for 8 minutes.
  2. Step 2. Add the water and the sweet potato and simmer for 12 minutes.
  3. Step 3. Slide in the fish and simmer gently for 8–10 minutes without stirring hard, so the pieces stay whole.
  4. Step 4. Check the fish is opaque and flakes easily before serving.
  5. Step 5. For a milder version, use half the pepper.
