Method

  1. Step 1. Heat the oil in a pan over medium heat and fry the onion until soft.
  2. Step 2. Add the tomatoes and pepper and cook for 5–6 minutes until the mixture thickens.
  3. Step 3. Stir in the shredded ugu or spinach and cook for 1 minute.
  4. Step 4. Beat the eggs, pour into the pan and stir gently until fully set with no runny parts.
  5. Step 5. Season lightly with salt and serve hot with boiled yam, sweet potato or wholemeal bread.
