Method

  1. Step 1. Boil the beef with the onion in 800 ml water for 30–35 minutes until tender and cooked right through.
  2. Step 2. Add the palm oil, dawadawa and crayfish if using, and simmer for 5 minutes.
  3. Step 3. Sprinkle in the kuka powder, stirring steadily so it does not clump, and simmer for 5 minutes.
  4. Step 4. For the tuwo, bring the remaining water to the boil, add the maize flour gradually and stir firmly until smooth and fully cooked, about 12–15 minutes.
  5. Step 5. Mould the tuwo into portions and serve with the soup.
