Method

  1. Step 1. Fry the plantain slices in the oil for 6–8 minutes, turning once, until golden, then push to one side of the pan.
  2. Step 2. Add the onion and tomato and cook for 3 minutes.
  3. Step 3. Stir in the washed shredded ugu and cook for 2 minutes.
  4. Step 4. Beat the eggs, pour into the pan and cook, stirring, until fully set with no runny egg white or yolk.
  5. Step 5. Serve straight from the pan.
