Method

  1. Step 1. Mix the ground egusi with a little water and half the chopped onion to a thick paste.
  2. Step 2. Heat the palm oil in a wide pot and cook the remaining onion for 4 minutes, then add the blended tomato and cook for 8 minutes.
  3. Step 3. Add the egusi paste in spoonfuls, cover and cook for 10 minutes, then break it up gently and add the water.
  4. Step 4. Add the fish and the crayfish if using, and simmer for 10–12 minutes until the fish is opaque throughout and flakes apart with no translucent centre.
  5. Step 5. Stir in the washed ugu and spinach, cook for 3–4 minutes, season lightly and serve with a small portion of pounded yam, eba or rice.
