Method
- Step 1. Boil the yam cubes in lightly salted water for 15–18 minutes until tender, then drain.
- Step 2. Heat the oil and cook the onion, tomato and pepper for 6–8 minutes.
- Step 3. Stir in the washed greens for 1 minute.
- Step 4. Beat the eggs, pour into the pan and stir until completely set — no runny yolk or white.
- Step 5. Serve the egg sauce over the yam while hot.
