Method

  1. Step 1. Boil the yam in lightly salted water for 15–20 minutes until soft.
  2. Step 2. Fry the onion in the oil, then add the tomatoes, pepper and carrot and cook for 8 minutes.
  3. Step 3. Add the green beans or ugu and cook for a further 3 minutes.
  4. Step 4. Beat the eggs, pour in and stir until fully cooked with no runny parts.
  5. Step 5. Serve the sauce over the drained yam.
