Method
- Step 1. Preheat the oven to 400°F (200°C).
- Step 2. Heat the oil in an ovenproof dish on the stovetop and fry the garlic for 1 minute.
- Step 3. Stir in the chopped tomatoes and lima beans and simmer for 5 minutes.
- Step 4. Nestle the cod fillets into the sauce and season lightly.
- Step 5. Transfer to the oven and bake for 15–18 minutes until the fish is opaque and flakes easily.
- Step 6. Scatter with parsley and serve steaming hot with crusty bread.
