Method
- Step 1. Heat the oil in a large pan and fry the leek, carrots and celery for 5 minutes.
- Step 2. Add the broth and thyme and bring to a simmer.
- Step 3. Add the diced chicken and simmer gently for 15–20 minutes until it's cooked through with no pink meat and juices run clear.
- Step 4. Stir in the peas and cook for a further 3 minutes.
- Step 5. Check the chicken is steaming hot throughout before removing from the heat.
- Step 6. Season to taste and remove the thyme sprigs.
- Step 7. Cool quickly, then portion into containers for the refrigerator or freezer.
- Step 8. Reheat until steaming hot throughout, checking the chicken is fully hot before serving.
