Method

  1. Step 1. Preheat the oven to 400°F (200°C).
  2. Step 2. Put the potatoes, peppers, zucchini and onion into a large roasting tray.
  3. Step 3. Toss the vegetables with half the olive oil, garlic and oregano.
  4. Step 4. Nestle the chicken thighs among the vegetables and drizzle with the remaining oil.
  5. Step 5. Season well and roast for 40–45 minutes, turning once.
  6. Step 6. Check the chicken is cooked until steaming hot throughout with no pink meat remaining and the juices run clear before serving.
  7. Step 7. Serve straight from the tray while hot.
