Method
- Step 1. Preheat the oven to 400°F (200°C) (fan 180°C).
- Step 2. Toss the pepper, zucchini and onion in olive oil and roast for around 20 minutes until soft.
- Step 3. Griddle or pan-fry the halloumi slices for 2 minutes each side until golden.
- Step 4. Warm the tortillas briefly in a dry pan.
- Step 5. Spread each tortilla with yogurt, then layer with washed salad leaves, roasted vegetables and halloumi.
- Step 6. Roll up tightly, slice in half and serve.
