Method

  1. Step 1. Preheat the broil to medium-high.
  2. Step 2. Broil the mackerel fillets for 4–5 minutes each side until opaque and cooked through.
  3. Step 3. Meanwhile, combine the butter beans, tomatoes, cucumber and red onion in a bowl.
  4. Step 4. Dress the salad with olive oil, lemon juice and parsley.
  5. Step 5. Check the mackerel is steaming hot (165°F) and flakes easily before serving.
  6. Step 6. Serve the mackerel on top of the salad.
