Method

  1. Step 1. Heat the oil in a non-stick pan over a medium heat.
  2. Step 2. Add the crumbled tofu and turmeric and cook, stirring, for 4–5 minutes until steaming hot throughout.
  3. Step 3. Wash the spinach thoroughly and stir in until wilted.
  4. Step 4. Season with black pepper.
  5. Step 5. Meanwhile, toast the whole wheat bread.
  6. Step 6. Serve the scramble on the toast immediately.
