Our recipes use a 15 ml tablespoon. The standard Australian tablespoon holds 20 ml, so use three level teaspoons where a tablespoon is listed.

Method

  1. Step 1. Heat the oven to 200°C (180°C fan). Toss the potatoes, zucchini and capsicum with two tablespoons of oil and roast for 20 minutes.
  2. Step 2. Add the washed tomatoes, lay the fish on top, scatter over the saltbush, add the lemon slices and drizzle with the remaining oil.
  3. Step 3. Bake for a further ten to twelve minutes until the fish is opaque, flakes easily and is steaming hot throughout.
  4. Step 4. Rest for two minutes and serve straight from the tray.
