Our recipes use a 15 ml tablespoon. The standard Australian tablespoon holds 20 ml, so use three level teaspoons where a tablespoon is listed.

Method

  1. Step 1. Cook the quinoa in plenty of water for 12 to 15 minutes until tender, then drain.
  2. Step 2. Rub the chicken with half the oil and the oregano and cook in a pan over medium heat for six to seven minutes each side, until the juices run clear and there is no pink meat. Rest, then slice.
  3. Step 3. Steam the broccolini for three minutes and char the capsicum in the same pan.
  4. Step 4. Divide the quinoa between bowls, add the vegetables and washed spinach, top with the chicken and dress with lemon juice and the remaining oil.
