Very lean kangaroo fillet cooked quickly with capsicum, snow peas and broccoli, served with brown rice. Kangaroo is a naturally lean, iron-rich Australian red meat.

Method

  1. Step 1. Heat a wok until very hot and sear the kangaroo in two batches for one to two minutes a batch, then set aside.
  2. Step 2. Stir-fry the broccoli, capsicum and snow peas with the garlic and ginger for four to five minutes, adding a splash of water to steam.
  3. Step 3. Return the meat, add the soy sauce and toss for a further minute until the meat is cooked to at least medium and hot throughout.
  4. Step 4. Serve over hot brown rice.
