Method

  1. Step 1. Soften the onion, carrot and garlic in the oil in a large pan.
  2. Step 2. Add the lamb mince and cook until browned right through.
  3. Step 3. Stir in the lentils and tomatoes and simmer for 40 minutes until thick and the lentils are tender.
  4. Step 4. Cool leftovers quickly and refrigerate or freeze in portions.
