Method

  1. Step 1. Poach the prawns in simmering water for three to four minutes until they are opaque right through, then cool quickly and slice in half lengthways.
  2. Step 2. Soak the vermicelli in boiling water until soft, drain and rinse.
  3. Step 3. Dip one rice paper wrapper at a time in warm water for a few seconds, lay flat, and fill with noodles, vegetables, washed herbs and prawns. Roll firmly.
  4. Step 4. Whisk the soy sauce, lime juice and honey with a tablespoon of water for dipping.
