Method

  1. Step 1. Heat the oven to 200°C (180°C fan) and boil the potatoes until tender.
  2. Step 2. Lay each fillet on a large square of baking paper with zucchini, tomato, dill, lemon and a drizzle of oil.
  3. Step 3. Fold the paper into sealed parcels and bake for 15 to 18 minutes.
  4. Step 4. Open carefully — steam is very hot — and check the fish is opaque and flakes easily before serving with the potatoes.
