Our recipes use a 15 ml tablespoon. The standard Australian tablespoon holds 20 ml, so use three level teaspoons where a tablespoon is listed.

Method

  1. Step 1. Cook the onion and capsicum in the oil for eight minutes, then add the spices, tomatoes, beans and corn and simmer for 12 minutes until thick.
  2. Step 2. Stir the rice through and cool the filling quickly.
  3. Step 3. Fill and roll the tortillas, then wrap each one in baking paper and foil.
  4. Step 4. Freeze flat. To eat, defrost overnight in the fridge and bake at 190°C (170°C fan) for 20 to 25 minutes until steaming hot right through.
