Method

  1. Step 1. Heat the oven to 190°C (170°C fan) and roast the pumpkin with one tablespoon of oil for 20 minutes.
  2. Step 2. Soften the onion in the remaining oil in an ovenproof pan, then wilt the washed spinach through it.
  3. Step 3. Whisk the eggs with the milk and pour over the vegetables, add the pumpkin and feta.
  4. Step 4. Bake for 20 to 25 minutes until fully set in the centre with no liquid egg.
