Method

  1. Step 1. Brown the tofu in half the oil until golden, then set aside.
  2. Step 2. Stir-fry the broccoli and capsicum in the remaining oil with the garlic and ginger, adding a splash of water to steam for four minutes.
  3. Step 3. Return the tofu, add the soy sauce and cashews and toss until hot.
  4. Step 4. Serve over hot brown rice.
