Method

  1. Step 1. Heat the oven to 200°C (180°C fan).
  2. Step 2. Toss the vegetables and garlic with the oil in a large roasting tray and roast for 20 minutes.
  3. Step 3. Add the chicken and rosemary, and roast for a further 25 minutes until the chicken is cooked through with clear juices and no pink meat.
  4. Step 4. Squeeze over the lemon juice and serve with steamed greens or a salad.
