Method

  1. Step 1. Heat half the oil in a non-stick frying pan and cook the mushrooms over medium-high heat until browned.
  2. Step 2. Add the washed spinach and cook until just wilted, then tip onto a plate.
  3. Step 3. Whisk the eggs with pepper. Add the remaining oil to the pan and pour in the eggs.
  4. Step 4. Cook over medium heat until the base is set and the top is no longer runny, scatter over the vegetables and cheese, fold and cook a further minute until firm right through.
