Method

  1. Step 1. Soften the onion in a large pot, then add the potato and broth and simmer for 15 minutes.
  2. Step 2. Pour in the milk and corn and bring back to a gentle simmer without boiling hard.
  3. Step 3. Add the haddock and simmer for 6–8 minutes, until the fish is opaque and flakes easily.
  4. Step 4. Scatter over the chives and serve hot.
