Method

  1. Step 1. Cook your chosen dishes and check they reached safe internal temperatures.
  2. Step 2. Cool quickly — divide into shallow containers and refrigerate within two hours.
  3. Step 3. Label each container with the dish and the date before freezing.
  4. Step 4. Freeze for up to three months; defrost overnight in the fridge and reheat once until steaming hot (74°C or above).
