Method

  1. Step 1. Brown the chicken in a large pot, then set aside.
  2. Step 2. Soften the onion, carrot and celery in the same pot for 8 minutes.
  3. Step 3. Return the chicken, add the barley and broth and bring to the boil.
  4. Step 4. Simmer for 35–40 minutes until the barley is tender and the chicken reaches 74°C.
  5. Step 5. Stir through the parsley before serving.
