Method

  1. Step 1. Soften the onion, carrot and celery in the oil in a large pot.
  2. Step 2. Add the lentils, barley and broth and bring to a boil.
  3. Step 3. Simmer for 35 minutes until the barley is tender.
  4. Step 4. Cool leftovers quickly and refrigerate or freeze in portions.
