Method

  1. Step 1. Cook the onion, carrot and mushrooms in a little oil for 10 minutes until reduced.
  2. Step 2. Add the lentils, tomatoes, oregano and 500 ml water.
  3. Step 3. Simmer for 30–35 minutes until the lentils are soft and the sauce is thick.
  4. Step 4. Cook the pasta, drain and serve with the sauce.
