Method

  1. Step 1. Heat the oven to 200°C. Toss the potatoes, carrots and sprouts with the oil on a large sheet pan and roast for 20 minutes.
  2. Step 2. Stir the maple syrup and mustard together.
  3. Step 3. Move the vegetables aside, add the salmon and brush with the glaze.
  4. Step 4. Roast for a further 10–12 minutes, until the salmon flakes easily and reaches 70°C.
