Method

  1. Step 1. Heat the oven to 190°C and line a 12-hole muffin tin.
  2. Step 2. Whisk the pumpkin, eggs, maple syrup and oil together.
  3. Step 3. Stir in the flour, oats, baking powder and cinnamon until just combined.
  4. Step 4. Divide between the cases and bake for 20–22 minutes, until a skewer comes out clean.
  5. Step 5. Cool on a rack before storing.
