Method

  1. Step 1. Soften the onion, carrot and celery in a large pot with a little oil for 8 minutes.
  2. Step 2. Add the split peas, broth, herbs and bay leaf and bring to the boil.
  3. Step 3. Reduce the heat, cover partly and simmer for about an hour, until the peas collapse.
  4. Step 4. Remove the bay leaf, season with pepper and mash lightly for a thicker soup.
