Method

  1. Step 1. Heat the oven to 200°C. Toss the root vegetables with the oil and spread on a sheet pan.
  2. Step 2. Roast for 25–30 minutes, turning once, until tender and lightly caramelised.
  3. Step 3. Spread hummus over each tortilla and add spinach.
  4. Step 4. Add the roasted vegetables, roll tightly and cut in half.
