Method

  1. Step 1. Heat the oven to 200°C.
  2. Step 2. Toss the vegetables with the oil and thyme on a large sheet pan.
  3. Step 3. Nestle in the chicken and season with pepper.
  4. Step 4. Roast for 40–45 minutes, turning the vegetables once, until the chicken reaches 74°C and the juices run clear.
